The ma­jes­tic-look­ing globe ar­ti­choke – in dull-green, bronze or pur­ple – is the large flower bud of the this­tle. Its edi­ble leaves, or petals, cover the de­li­cious prized heart in the cen­tre. Ar­ti­chokes have long been recog­nised as a nat­u­ral di­ges­tive. An­other re­puted health ben­e­fit is their choles­terol-low­er­ing qual­ity.
