MUSHROOM AND DILL PILAF

Heat 2 tablespoon­s extra virgin olive oil in a frying pan over high heat; cook 250g swiss brown mushrooms for 8 minutes or until browned and tender. Remove from pan. Add a 250g packet microwave brown basmati rice, 2 finely chopped green onions, 1 teaspoon smoked paprika and 2 tablespoon­s each pistachios and currants to the pan; cook, stirring, for 5 minutes or until pilaf is heated through. Stir in the mushrooms and serve topped with dill sprigs.
