BEAN NACHOS
PREP + COOK TIME 10 MINUTES SERVES 4
Preheat oven to 200°C/180°C fan. Combine a drained and rinsed 420g can four bean mix and 375g bottled thick and chunky tomato salsa in a small saucepan; bring to the boil. Meanwhile, place 200g packet corn chips in a large ovenproof dish and sprinkle with 1 cup (120g) coarsely grated cheddar; place on an oven tray. Bake for 5 minutes or until cheese has melted. Top cheesy corn chips with bean mixture, guacamole, sour cream and coriander leaves. Serve with lime cheeks, if you like.
