Raw apri­cot balls

MAKES 20 BALLS PREP TIME 15 MIN­UTES

1½ cups (275g) soft and juicy dried apri­cots

½ cup (75g) sul­tanas

½ cup (80g) nat­u­ral al­monds (ker­nels) ¼ cup (20g) des­ic­cated co­conut 2 ta­ble­spoons chia seeds

⅓ cup (25g) des­ic­cated co­conut, ex­tra

1 Place all the in­gre­di­ents, ex­cept the ex­tra co­conut, in a food pro­ces­sor. Process un­til ev­ery­thing forms a thick paste.

2 Roll level ta­ble­spoons of the mix­ture into balls.

3 Place the ex­tra co­conut in a shal­low bowl and roll the balls in co­conut to coat. Th­ese will store for sev­eral weeks in the fridge in an air­tight con­tainer. Suit­able to freeze.
