WITH sum­mer get­ting into full swing it’s the right time to drink pink.

Rosé looks set to be our wine of choice, tak­ing over from more tra­di­tional hot weather favourites such as sauvi­gnon blanc. The rosé seg­ment of the wine mar­ket is now worth $46 mil­lion and Cel­lar­mas­ters says it is the fastest grow­ing wine va­ri­ety across all cat­e­gories, up an as­ton­ish­ing 58 per cent in the past 12 months.

Syd­ney even has its first ded­i­cated rosé bar, Rosé Royale in Potts Point, which opened two weeks ago.

“I love rosé and I was sick of go­ing to restau­rants and hav­ing 15 whites, 15 reds and two rosés on the menu,” owner Jerome Fred­eric Dubois said. “We have had an ab­so­lutely amaz­ing re­sponse be­cause I think it was some­thing that was needed.”
