440ml milk, tepid 100g un­salted but­ter, soft­ened 75g caster su­gar 4 eggs 1 sa­chet dried yeast 600g plain flour ½tsp salt 250g ri­cotta 55g caster su­gar 1 le­mon, zest and juice 1 egg

CIN­NA­MON CRUMB:

220g caster su­gar 30g gin­ger bis­cuits, coarsely crushed 1tsp ground cin­na­mon ½tsp salt

SALTED CARAMEL

200g caster su­gar 60g salted but­ter, diced 125ml pure cream 1tsp sea salt
