Beer’s pro­duc­ers de­liver Christ­mas feast in­spi­ra­tion

Mag­gie Beer (pic­tured) in­vites spe­cial guests to join her for a Christ­mas feast at her Barossa Val­ley prop­erty. ‘‘I’m sim­ply a coun­try cook who lives in the Barossa where I’m sur­rounded by fan­tas­tic prod­uct,’’ says Beer, in­tro­duc­ing this sea­sonal spe­cial, Mag­gie Beer’s Christ­mas Feast. ‘‘This gave me the idea for a feast where I would think of my spe­cial lo­cal food pro­duc­ers and link their prod­ucts to my favourite dishes, and then have the pro­duc­ers come to the ta­ble un­der­neath my gum trees to cel­e­brate.’’ Beer serves up a menu in­spired by her own fam­ily Christ­mas cel­e­bra­tions. Ap­par­ently it just wouldn’t be Christ­mas at the Beers’ with­out yab­bies from the dam, served out­side and eaten us­ing fin­gers. Ditto a goose at the cen­tre of the ta­ble. Beer shows us how to serve up both, adding a per­fectly glazed ham, slowroasted lamb, pork, char-grilled beef, some fish and oys­ters, and a va­ri­ety of sal­ads. Guests are treated to a sur­prise recital, be­fore Beer serves up three stun­ning desserts and a va­ri­ety of lo­cal cheeses.
