The iconic Mexican Mermaid eatery even has a pumpkin taco on the menu – the Calabaza taco with pumpkin, corn guacamole, rocket, pickled onions, toasted pepitas, chimmichurri and queso fresco. Owner Morgan Walsh says pumpkin perhaps isn’t the most Mexican ingredient, but it makes for the perfect meat substitute for her vegan customers.
