The restau­rant site was once a brew­ery, owned by doomed Scots­man Charles Innes who went bank­rupt and died in a bath­tub. For­tu­nately things changed when his shrewd widow Mary Jane took over. She and her son went on to suc­cess­fully pro­duce beer and soda pop for many years. That legacy con­tin­ues. Chim Choo Ree is one of Hamil­ton’s best-loved eater­ies with a stack of culi­nary awards to un­der­score its clev­er­ness. The restau­rant is co-owned by Mor­gan Glass, Kim Hig­gi­son and chef Cameron Farmilo. When it moved from its in­ti­mate for­mer premises in Vic­to­ria Street, some folk thought it might lose its charm. Not so. With large serv­ings of ca­sual ca­ma­raderie, cou­pled with classy dishes like chipo­tle smoked pork ribs and beet­root and gin-cured Salmon fol­lowed by coconut-mac­a­roon ice cream sand­wiches, the love af­fair con­tin­ues.
