Spot the wa­ter buf­falo in the fields on the Matakana-Leigh road. Their graz­ing area (3.4 kilo­me­tres from the Matakana round­about) is also the des­ig­nated site for Whangapiro Buf­falo’s fac­tory and shop, and the new Sawmill Brew­ery, both open­ing in 2016. Un­til then, vis­i­tors to the area can buy buf­falo cheese from a stall at the Matakana mar­ket. Try the ash-coated brie, haloumi, yo­ghurt, and the fresh buf­falo moz­zarella that’s de­li­ciously matched with figs in the fol­low­ing recipe:
