The award-win­ning Mal­tese-Aus­tralian chef is in the twin port cities of Si­don, in the south of Le­banon, ex­plor­ing all the fresh food on of­fer.

He meets a chef who takes him fish­ing be­fore re­turn­ing to her restau­rant to cook him whole grilled fish with the guts in, plus some de­li­cious and dif­fer­ent mezze. He then tags along with a cheese pro­ducer who shows him how she makes her range of goat’s cheeses such as ri­cotta and labne.

And with your mouth still wa­ter­ing, Delia shows you how to make four dishes in­spired by his trip in­clud­ing haloumi salad and fish and chips.
