The award-winning Maltese-Australian chef is in the twin port cities of Sidon, in the south of Lebanon, exploring all the fresh food on offer.
He meets a chef who takes him fishing before returning to her restaurant to cook him whole grilled fish with the guts in, plus some delicious and different mezze. He then tags along with a cheese producer who shows him how she makes her range of goat’s cheeses such as ricotta and labne.
And with your mouth still watering, Delia shows you how to make four dishes inspired by his trip including haloumi salad and fish and chips.
