WITH no stoves, no ovens, just the power of fire, a ru­ral Queens­land restau­rant has be­come a sur­prise en­try in next week­end’s de­li­cious. 100 in U on Sun­day.

Ho­mage, at Spicers Hid­den Vale in Grand­ch­ester, an hour’s drive west of Bris­bane, pre­pares meals us­ing only an out­door open fire and brick-faced wood oven. “It’s ac­tu­ally re­ally cool,” head chef Ash Martin said.

“The first few months were re­ally chal­leng­ing, and all the chefs had to ba­si­cally throw out what they knew about nor­mal cook­ing and start from scratch, but now I think they’d struggle in a reg­u­lar kitchen. It’s chal­leng­ing, but it’s fun.”

Even more ex­cit­ing is that much of the pro­duce in the dishes is ei­ther grown on site, such as corn, chill­ies, toma­toes and cu­cum­bers, or bought from lo­cal farm­ers.
