PERU Head to Chicha in Cusco for regional fine dining. Savour alpaca carpaccio and guinea pig served Peking style (Chinese inspiration known as Chifa).
CHILE Chilean Ajiaco is a breakfast soup of beef and potatoes in vegetable broth with an egg stirred through – an all-time fave with locals found at early-morning Santiago markets.
BRAZIL Sao Joaquim market in Salvador is the place for a quick, tasty bite, fresh ingredients and cute handmade souvenirs. You could spend the whole day there savouring diverse flavours.
