The “lo­cal In­dian” used to be a fam­ily favourite eat­ing-out ex­pe­ri­ence across Bri­tain and still is, even though there’s more com­pe­ti­tion from a plethora of eth­nic cuisines. If there’s one per­son who knows cur­ries it’s au­thor Mad­hur Jaf­frey, who in this episode vis­its York­shire where lo­cals from Mirpur, a small area of Pak­istani Kash­mir, share the se­crets of their richly spiced cur­ries. She watches how to make a curry in seven min­utes at one of the county’s most suc­cess­ful curry restaurants, Mum­taz. This sounds like a recipe even I could fol­low.
