AWARDWINNING chef Dietmar Sawyere is the owner of noted Sydney restaurants Forty One, which he opened in 1993, and Berowra Waters Inn. Swiss-born Sawyere comes from a family of restaurateurs and began working for his father at age 14. He refined his craft at London institutions such as the Savoy and Connaught hotels and has consulted for Singapore Airlines and the Hyatt Hotel group. DEHILLERIN, PARIS As a lover of all things gastronomic, my favourite store is Dehillerin in Les Halles area of Paris.
