The cui­sine is never static or even clas­sic; the ed­i­tor writes an in­tro­duc­tion chal­leng­ing the pop­u­lar idea of clas­sic Ital­ian, the dishes here be­ing new or rein­ven­tions of tra­di­tion. A book of en­cy­clo­pe­dic thick­ness, it is de­signed for use, its open pages ly­ing beau­ti­fully flat, each recipe com­plete on the page and clearly set out, some with small mono pho­to­graphs, while full-colour pages are in­ter­spersed through­out the book, more for in­ter­est than in­struc­tion. Recipes are marked for dif­fi­culty and di­rec­tions leave room for cre­ativ­ity.
