He’s the executive chef at Hayman resort, which is due to reopen on July 31 after its closure in the aftermath of tropical cyclones Anthony and Yasi. Bacon is heading for Esca Bimbadgen at Bimbadgen Winery in NSW’s Hunter Valley for a Hayman in the Hunter event from June 3 to 5; he’ll unveil a menu due to be launched at Hayman’s revamped Fontaine restaurant.
