THE win­ners of T&I’s competition to win a trip to the Mun­dar­ing Truf­fle Fes­ti­val are He­len and Richard Warn, of Bondi, NSW. De­tec­tive wishes she were stow­ing away in their lug­gage, as the event, on July 30-31, prom­ises lots of demos and tast­ings, mas­ter­classes and long lunches. Of par­tic­u­lar ap­peal to truf­fle-hun­gry De­tec­tive is the stall run by Rus­sell Blaikie of Must Winebar and Must Mar­garet River, which will serve dishes com­bin­ing truf­fles and Mt Barker Free Range Chicken. On the menu is chicken and leek soup with truf­fle foam and chicken truf­fle par­fait, fol­lowed by boudin blanc sausage. For sweets there’s truf­fle chicken chocolate ice cream, which Blaikie says uses a touch of chicken stock that ‘‘en­riches the ice cream but doesn’t al­ter the flavour to savoury’’.
