THE winners of T&I’s competition to win a trip to the Mundaring Truffle Festival are Helen and Richard Warn, of Bondi, NSW. Detective wishes she were stowing away in their luggage, as the event, on July 30-31, promises lots of demos and tastings, masterclasses and long lunches. Of particular appeal to truffle-hungry Detective is the stall run by Russell Blaikie of Must Winebar and Must Margaret River, which will serve dishes combining truffles and Mt Barker Free Range Chicken. On the menu is chicken and leek soup with truffle foam and chicken truffle parfait, followed by boudin blanc sausage. For sweets there’s truffle chicken chocolate ice cream, which Blaikie says uses a touch of chicken stock that ‘‘enriches the ice cream but doesn’t alter the flavour to savoury’’.
