THE de­li­cious pisco sour is the sub­ject of heated de­bate be­tween Peru­vians and Chileans. Just whose na­tional drink is it? While the bick­er­ing con­tin­ues, no trip to ei­ther coun­try would be com­plete with­out im­bib­ing at least a cou­ple of these de­li­ciously wicked con­coc­tions, a com­bi­na­tion of pisco (a lightly flavoured white brandy), le­mon juice, egg white and su­gar syrup, shaken un­til it forms a frothy head, and served with a smear of bit­ters on top. You could be tak­ing a bet both ways when or­der­ing one at Peru­vian uber-chef Gas­ton Acu­rio’s new La Mar Ce­bicheria in the heart of Chile’s cap­i­tal, San­ti­ago.
