THE delicious pisco sour is the subject of heated debate between Peruvians and Chileans. Just whose national drink is it? While the bickering continues, no trip to either country would be complete without imbibing at least a couple of these deliciously wicked concoctions, a combination of pisco (a lightly flavoured white brandy), lemon juice, egg white and sugar syrup, shaken until it forms a frothy head, and served with a smear of bitters on top.
