SYD­NEY chef Sean Mo­ran (pic­tured) has earned a ded­i­cated fol­low­ing at his ex­cel­lent Sean’s Pa­naroma restau­rant in Bondi. Much of the pro­duce in his award­win­ning dishes is sourced from the 20ha work­ing farm Mo­ran and part­ner Michael ‘‘Manoo’’ Robert­son es­tab­lished in 2009 at Bilpin in the NSWBlue Moun­tains. Those keen to know more about the pad­dock-to-plate phi­los­o­phy can check in to Farm Pa­naroma for farm­stay ex­pe­ri­ences com­plete with home­style din­ners — roast chook and veg­gies from the garden, per­haps — pre­pared by Manoo. Get up close and per­sonal with the res­i­dent live­stock (rare-breed Wilt­shire horn sheep, sad­dle­back pigs, goats, chooks and calves), pluck sea­sonal fruit from the or­chard or stroll to the spring-fed dam, well stocked with Mur­ray cod or yel­low­belly in sum­mer. Make a week­end of it and check out Bilpin’s Satur­day Farm­ers Mar­ket, which is right next door.
