SYDNEY chef Sean Moran (pictured) has earned a dedicated following at his excellent Sean’s Panaroma restaurant in Bondi. Much of the produce in his awardwinning dishes is sourced from the 20ha working farm Moran and partner Michael ‘‘Manoo’’ Robertson established in 2009 at Bilpin in the NSWBlue Mountains. Those keen to know more about the paddock-to-plate philosophy can check in to Farm Panaroma for farmstay experiences complete with homestyle dinners — roast chook and veggies from the garden, perhaps — prepared by Manoo. Get up close and personal with the resident livestock (rare-breed Wiltshire horn sheep, saddleback pigs, goats, chooks and calves), pluck seasonal fruit from the orchard or stroll to the spring-fed dam, well stocked with Murray cod or yellowbelly in summer. Make a weekend of it and check out Bilpin’s Saturday Farmers Market, which is right next door.
