MEL­BOURNE chef and restau­ra­teur Guy Grossi is one of Aus­tralia’s lead­ing au­thor­i­ties on Ital­ian cui­sine and in this thump­ing great vol­ume with a dis­tinc­tive red cover he charts an epic jour­ney through some of the most in­ter­est­ing food re­gions of the coun­try of his her­itage.

Grossi homes in on key in­gre­di­ents (straw­ber­ries, buck­wheat, ar­ti­sanal cheeses, myr­iad seafood va­ri­eties) from Pied­mont to Puglia, in­tro­duc­ing the producers whose fam­i­lies have been farm­ing and fish­ing for gen­er­a­tions. Con­tin­u­ing the pad­dockto-plate theme, the Grossi Florentino owner and pre­sen­ter of SBS tele­vi­sion se­ries Ital­ian Food Sa­fari trans­forms the freshly sourced pro­duce in 150 recipes of the de­lec­ta­ble likes of ri­cotta gnoc­chi smoth­ered in but­ter and thyme; braised lentils with roasted duck and Tus­can kale; and a lemony and light olive oil cake.

Chap­ters are ar­ranged by re­gion, and scat­tered with anec­dotes about Grossi’s childhood and fam­ily tra­di­tions. Mark Chew’s rus­tic food photography and evoca­tive im­ages of Vene­tian la­goons, sparkling Amalfi Coast beaches and Si­cil­ian olive groves com­plete a very en­tic­ing pic­ture.
