DAVID Thompson’s former London restaurant Nahm was the first Thai eatery in Europe to win a Michelin star. He is credited with writing the definitive guide to Thai cuisine and his dining spot in the Metropolitan by Como hotel in Bangkok has won over a demanding local audience. Now this busy expat Australian is adding cruise cuisine to his repertoire with his appointment as executive chef on Aqua Mekong, a luxury cruiser set to ply the Mekong River between Cambodia and Vietnam from September. Thompson is the second high-profile chef to be signed by adventure travel company Aqua Expeditions. Peruvian Pedro Miguel Schiaffino, celebrated for his innovative use of local ingredients, oversees the food on the group’s Amazon vessels, Aqua and Aria. Thompson, Asia’s highest-ranked chef on the San Pellegrino World’s Best Restaurants list, will take inspiration from the culinary traditions of Mekong communities in his onboard menus, sourcing his ingredients in Ho Chi Minh City, Phnom Penh and Siem Reap.
