DAVID Thomp­son’s for­mer Lon­don restau­rant Nahm was the first Thai eatery in Europe to win a Miche­lin star. He is credited with writ­ing the de­fin­i­tive guide to Thai cui­sine and his din­ing spot in the Met­ro­pol­i­tan by Como ho­tel in Bangkok has won over a de­mand­ing lo­cal au­di­ence. Now this busy ex­pat Aus­tralian is adding cruise cui­sine to his reper­toire with his ap­point­ment as ex­ec­u­tive chef on Aqua Mekong, a lux­ury cruiser set to ply the Mekong River be­tween Cambodia and Viet­nam from Septem­ber. Thomp­son is the sec­ond high-pro­file chef to be signed by ad­ven­ture travel com­pany Aqua Ex­pe­di­tions. Peru­vian Pe­dro Miguel Schi­affino, cel­e­brated for his in­no­va­tive use of lo­cal in­gre­di­ents, over­sees the food on the group’s Ama­zon ves­sels, Aqua and Aria. Thomp­son, Asia’s high­est-ranked chef on the San Pel­le­grino World’s Best Restau­rants list, will take in­spi­ra­tion from the culi­nary tra­di­tions of Mekong com­mu­ni­ties in his on­board menus, sourc­ing his in­gre­di­ents in Ho Chi Minh City, Ph­nom Penh and Siem Reap.
