New res­tau­rant of­fers au­then­tic Ja­panese fare

A NEW of­fer­ing in Palm Cove, Kushi Yak­i­tori Bar and Ja­panese Res­tau­rant brings an au­then­tic taste of Ja­pan to the north­ern beaches.

“Peo­ple can find Ja­panese dishes from other places but not yak­i­tori (skew­ered chicken),” owner Al­lan Park says.

“We do Ja­panese tra­di­tional skew­ers cooked on char­coal in the yak­i­tori bar lo­cated on the mid­dle of the res­tau­rant. So, peo­ple can see from any­where what we do­ing.”

Al­lan says he opened Kushi be­cause even though there are a lot of sushi restau­rants in Cairns, other tra­di­tional dishes like Yak­i­tori are harder to find.

“I would like to of­fer real Ja­panese food, with a Ja­panese at­mos­phere to lo­cal cus­tomers with­out them go­ing to Ja­pan,” he says.

“Tourists can­not go to the pop­u­lar reef in Cairns and be in Ja­pan at the same time. So, I would like to give them the chance to en­joy two places at once.”

Kushi in­vokes the feel of an au­then­tic Ja­panese res­tau­rant, with all-Ja­panese dec­o­ra­tions, re­spect­ful and kind staff, but of­fers amaz­ing an set­ting on the Palm Cove wa­ter­front with the ocean just a stone’s throw away.

Al­lan ex­plains that he would like Cairns lo­cals to learn about the many types of tra­di­tional Ja­panese cui­sine, like yak­i­tori.

“Most peo­ple don’t know what yak­i­tori is,” he says.

All dishes served at Kushi are made with lo­cal in­gre­di­ents — fish, beef and chicken — adding to the fu­sion of tra­di­tional Ja­panese recipes and meals with the ap­peal of stay­ing in the Far North.

“Our aim is to make our cus­tomers happy from the start to the end,” Al­lan says.
