Loaded po­tato mash

A PO­TATO side dish that is bet­ter than the av­er­age.

Recipe to serve eight.


■ Six large po­ta­toes

■ Equal parts sour cream and cream cheese (roughly 1⁄4 to 1⁄2 a cup of each)

■ Chives or spring onions, chopped finely

■ A cup of grated cheese

■ A cup of diced ba­con (un­cooked or cooked, doesn't mat­ter)


Cook po­ta­toes in pot of boil­ing wa­ter and mash roughly.

Place in a mix mas­ter and com­bine all in­gre­di­ents to­gether and mix.

Place into an un­lined bak­ing dish and bake in a mod­er­ate oven un­til the top is a nice crunchy golden colour.
