The Broad­way edition of Salt, Meats, Cheese is a restau­rant and café, not a small­go­ods em­po­rium. Piz­zas are done Napoli style, but what you’re re­ally here for is the flam­ing cheese wheel: it’s like the Pimp My Ride ver­sion of mac’n’cheese. A huge wheel of pecorino rolls around on a trol­ley. Brandy is set alight and and poured into the wheel, melt­ing the cheese as the sides are scraped up, ready to dance with your pasta.
