Smuggle some goodness into sausages . . . use any combination of flavours you like, including herbs such as basil and garlic. Preparation time: 10 minutes Cooking time: 10 minutes Makes 6 4 sausages, coarsely chopped
1⁄2 cup frozen mixed vegetables, cooked 4 cherry tomatoes 1 tbs pine nuts 1 egg
1⁄2 tsp olive oil Mashed potato, to serve 1. Process the sausage, vegetables, tomatoes and pine nuts in a food processor until combined. 2. Add the egg and process until just combined. 3. Transfer the mixture to a sealable plastic bag. Cut 1 corner from the bag. 4. Heat the oil in a large frying pan over mediumlow heat. 5. Pipe 6 sausage-lengths of mixture into the pan. Cook, turning occasionally, for 8 minutes or until golden and cooked through. Serve with mash.
