Smug­gle some good­ness into sausages . . . use any com­bi­na­tion of flavours you like, in­clud­ing herbs such as basil and gar­lic. Prepa­ra­tion time: 10 min­utes Cook­ing time: 10 min­utes Makes 6 4 sausages, coarsely chopped

1⁄2 cup frozen mixed veg­eta­bles, cooked 4 cherry toma­toes 1 tbs pine nuts 1 egg

1⁄2 tsp olive oil Mashed potato, to serve 1. Process the sausage, veg­eta­bles, toma­toes and pine nuts in a food pro­ces­sor un­til com­bined. 2. Add the egg and process un­til just com­bined. 3. Trans­fer the mix­ture to a seal­able plas­tic bag. Cut 1 cor­ner from the bag. 4. Heat the oil in a large fry­ing pan over medi­um­low heat. 5. Pipe 6 sausage-lengths of mix­ture into the pan. Cook, turn­ing oc­ca­sion­ally, for 8 min­utes or un­til golden and cooked through. Serve with mash.
