A BIT ON THE SIDE

Pair Brus­sels sprouts with ba­con for a hearty side dish that will com­ple­ment any meal.

METHOD

1. Pre­heat a deep fryer to 180°C.

2. Re­move one layer from the Brus­sels sprouts and dis­card, then cut them in half and wash. 3. Leave in a colan­der to drain the ex­cess wa­ter. 4. Put a pot of salted boil­ing wa­ter on the stove. 5. Blanch the Brus­sels sprouts in the wa­ter for about 2 min­utes, then place into ice wa­ter. 6. When cool, re­move from the wa­ter and dry the sprouts with pa­per tow­els.

7. When the deep fryer is hot, add the Brus­sels sprouts and deep fry un­til golden in colour. 8. Heat a large pan over medium to high heat, then add the but­ter and olive oil.

9. Add the ba­con and cook for 2 to 3 min­utes, then add the rose­mary and fried Brus­sels sprouts and cook for a fur­ther 3 min­utes. 10. Add sea­son­ing and place into a serv­ing dish.
