Bickford, who has 25 years cooking experience behind him brings passion and creativity to his craft. He grew up in the Blue Mountains and as a child was inspired to take up cooking after watching his mother bake at home. Starting his culinary career at 14, he eventually won his own chef hat while working as the executive chef at Bowral’s Milton Park and Eschalot in the Southern Highlands. Bickford says The Gantry appeals to people because it offers an element of surprise to the fine dining experience.
