From the skil­ful artistry of Pe­ter Gil­more, there is noth­ing quite like the iconic Snow Egg, a sig­na­ture dish of the Quay and pos­si­bly Aus­tralia’s most pop­u­lar dessert. The eggshaped meringue filled with ice­cream on a nest of fruit-flavoured granita is a multi-di­men­sional tex­tu­ral treat. Af­ter crack­ing open the egg, spoon a good mix of ice-cream and soft meringues which melt into the icy, fresh granita - an ab­so­lutely re­fresh­ing in­dul­gence.
