Gun­ners' Bar­racks, nes­tled in the bush­land at Mos­man, is one of the five pre­mium host­ing venues owned by the Grand Pa­cific Group. The oth­ers in­clude The Tea Room QVB in Syd­ney, The Blue Room at Bondi Beach, Sergeants Mess at Chower Bay and Dun­bar House at Wat­sons Bay.

“We host all kinds of events such as wed­dings, birth­days, cor­po­rate cel­e­bra­tions and gala din­ners. We play an in­te­gral part in bring­ing peo­ple to­gether to en­joy and cel­e­brate spe­cial mo­ments while cre­at­ing unique ex­pe­ri­ences. I feel very priv­i­leged in this busi­ness and that's what mo­ti­vates me," Manuel Spinola, founder of Grand Pa­cific Group, ex­presses his en­thu­si­asm.

“Hand in hand, till old we grow” - a sa­cred vow amid the spec­ta­cle of mother-na­ture marks the turn­ing point of a new chap­ter in life. Gun­ners' Bar­racks has wit­nessed the solemn knot-ty­ing of many cou­ples.

The Gun­ners' Bar­racks has a long his­tory in the lo­cal area. It was de­signed by colo­nial ar­chi­tect James Bar­nett and was built in 1873. The Bar­racks was the first de­fence build­ing on Syd­ney Har­bour. Lo­cated on one of the Har­bour’s high­points of Ge­orges Heights, it boasts a priv­i­leged panoramic view that is best en­joyed from the large ter­race. “...highly rec­om­mend for func­tions. Not only is the lo­ca­tion amaz­ing, so is the menu and level of ser­vice” is the praise in a re­view from Trip Ad­viser.

Gun­ners' Bar­racks 本身就是座見證著澳洲歷史的建築。根據 Manuel介紹,建築始與 1873 年,是二戰時期悉尼港口畔首座為捍衛和保衛戰而建的軍事基地。其地理位置就是天然的屏障,它處於悉尼北部海濱Mos­man 的高 地 Ge­orge Height,是戰時最佳的瞭望臺,如今,這座建築坐擁登高望遠的天然優勢。

Nathan 說道,餐廳不單打造菜單,更為貴賓特殊的日子精心策劃。Trip ad­viser 網站有一則對餐廳的反饋寫道:「我走進餐廳跟接待人員說,今天將向女友求婚。而後把戒指交給他們。用餐快結束時,服侍人員將戒指放在精緻的小盤上,另一盤內一塊巧克力標語寫著「你願意嫁給我嗎?」我單膝下跪! 而後音樂和掌聲響起,我們在浪漫且溫馨氣氛中度過,這是我倆一輩子的浪漫回憶」!

行政主廚 Nathan Dar­ling 在英國出生,而後在法國學習餐飲、烹飪技巧,對歐美飲食額外有研究。他將所學和近20年的經驗融入Gun­ners' Bar­racks 餐廳內成為精髓。除了餐點外,下午洋茶(High Tea)也是這裡的經典特色所在,源於17世紀的歐洲宮廷,象徵著貴族,品的是傳統和優雅,享受的是寧靜和歷史。

Join­ing Grand Pa­cific Group in 2016, Gun­ners' Bar­racks ac­claimed Head Chef, Nathan Dar­ling, em­pha­sizes the qual­ity of hand­made dishes on the menu which is specif­i­cally de­signed for each oc­ca­sion.

On top of fine din­ing ex­pe­ri­ences, what sets the venue apart, as Nathan sees it, is the team's drive and pas­sion for ex­cel­lent ser­vice. An­other re­view on Trip Ad­viser re­counts that “When we ar­rived I in­formed the wait staff that I planned to pro­pose to my girl­friend. The staff were amaz­ing. They took my ring and near the end of our high tea pre­sented a plate with words writ­ten in choco­late ‘Will you marry me?’ They had put the en­gage­ment ring on an­other plate. So I dropped to one knee and pro­posed. I couldn’t have asked for any­thing bet­ter.”

We com­mu­ni­cate well with our guests on their food needs and cul­tural back­ground to un­der­stand the de­tails re­quired for the per­fect menu that suits them.”

Nathan was born and raised in Sur­rey, U.K. He be­gan his ca­reer as a chef in his home town. Through work­ing at dif­fer­ent restau­rants, he learned the in­tri­ca­cies and skills of clas­si­cal French tech­niques and two decades of culi­nary ex­pe­ri­ence has made him an ex­pert on Euro­pean din­ing. His pas­sion and know-how, drawn from his clas­si­cal train­ing with Bri­tish and French in­flu­ences, have en­hanced the Gun­ners' Bar­racks a La Carte of­fer­ings and re­vi­tal­ized the tra­di­tional high tea ser­vice.

Con­sid­er­ing the age span of high tea pa­trons, Nathan Dar­ling fo­cuses on us­ing the fresh­est in­gre­di­ents pos­si­ble for a re­mark­able menu in which the clas­sic flavours and com­bi­na­tions will ap­peal to all guests, young and old.
