Lemon, rasp­berry and yo­ghurt mug pud­dings

Whisk to­gether all the in­gre­di­ents, ex­cept berries, with a fork, in a 1 cup (250ml) ca­pac­ity tea cup or mug. Sprin­kle with berries. Mi­crowave on high for one minute or un­til cake ap­pears cooked through.

Serve with vanilla yo­ghurt and a driz­zle of honey.


If cake ap­pears un­der­cooked, add an­other 10 sec­onds of cook­ing.

Recipe cook­ing time may vary depend­ing on wattage of Mi­crowave or thick­ness of mug or tea cup used.

Sub­sti­tute black­ber­ries for the rasp­ber­ries, if de­sired.

Frozen berries can be used, but ide­ally should be de­frosted be­fore use. > > > > > > > > >
