Twist on a tasty tri­fle

AN EASY week­night din­ner. This is also par­tic­u­larly nice re-heated the next day for lunches or on toast for break­fast.

One dish and no sides re­quired!

Make up a savoury mince how­ever you de­sire, I just fry a chopped onion, tea­spoon of gar­lic, mince and add in two cups of thick gravy.

Let cool slightly, pour into a glass bowl, or tri­fle bowl and tip half a bag of frozen peas over the mince, mak­ing it lay­ered on top.

Then grate about four car­rots, lay on top of peas.

Add a cup or two of grated cheese to mashed potato (about 6 pota­toes) and some but­ter and cream, or how­ever you make your reg­u­lar mash.

Layer again on top of the car­rot. Then top with fresh or dried shal­lots and a small slice of tomato. You can be as cre­ative as you like.

Now it’s ready to serve.
