Clas­sic date nut loaf

A LOAF that most peo­ple will love.

And is great to en­joy with a cuppa.


■ 1 cup of boil­ing wa­ter

■ 1 black tea tea bag

■ ¾ cup pit­ted dried dates ■ ¾ cup, lightly packed brown su­gar

■ 60 g but­ter

■ 180 g plain flour

■ 1½ tsp ground cin­na­mon ■ 1tsp bak­ing pow­der ■ ½ tsp Bi-Carb Soda

■ Pinch of salt

■ ½ cup chopped wal­nuts


Pre­heat the oven to 160°C. Grease a loaf tin.

Steep the tea bag in the boil­ing wa­ter for 30 sec­onds, then dis­card the tea bag.

Roughly chop the dates and put in a saucepan with the tea, su­gar and but­ter over medium– high heat.

Bring to the boil and sim­mer for 1 minute.

Set aside to cool.

Sift the flour, cin­na­mon, bak­ing pow­der, bak­ing soda and salt into a bowl.

Add the wal­nuts and mix through.

Pour the cooled date mix­ture onto the dry ingredients and mix well with a wooden spoon.

Tip into the pre­pared tin. Bake for 35 min­utes or un­til cooked through.

Serve with but­ter!
