1 Combine 1 tbs olive oil O 2 tsp finely grated lemon rind and O 2 garlic cloves, crushed, in a small jug. Season. Rub one third of oil mixture over O 4 x 125g lean pork loin steaks, fat trimmed. 2 Heat a large frying pan over medium-high heat. Cook pork for 3-4 minutes each side or until just cooked through. 3 Meanwhile, cut O 2 small green zucchini and O 4 patty pan squash into thin ribbons using a mandolin or vegetable peeler. Place in a large bowl. Add O 2 tbs lemon juice to remaining oil mixture. Add to zucchini mixture and toss to combine. Stand for 5 minutes. Add O ¾ cup fresh flat-leaf parsley and O ⅓ cup fresh basil leaves, torn if large, to salad and gently toss. Divide zucchini salad among plates, top with pork and sprinkle with ¼ cup (20g) toasted flaked almonds. SERVE WITH 0 Smartpoints value grape tomatoes and steamed brown rice.
