1 Com­bine 1 tbs olive oil O 2 tsp finely grated lemon rind and O 2 gar­lic cloves, crushed, in a small jug. Sea­son. Rub one third of oil mix­ture over O 4 x 125g lean pork loin steaks, fat trimmed. 2 Heat a large fry­ing pan over medium-high heat. Cook pork for 3-4 min­utes each side or un­til just cooked through. 3 Mean­while, cut O 2 small green zuc­chini and O 4 patty pan squash into thin rib­bons us­ing a man­dolin or veg­etable peeler. Place in a large bowl. Add O 2 tbs lemon juice to re­main­ing oil mix­ture. Add to zuc­chini mix­ture and toss to com­bine. Stand for 5 min­utes. Add O ¾ cup fresh flat-leaf pars­ley and O ⅓ cup fresh basil leaves, torn if large, to salad and gen­tly toss. Di­vide zuc­chini salad among plates, top with pork and sprin­kle with ¼ cup (20g) toasted flaked al­monds. SERVE WITH 0 Smartpoints value grape toma­toes and steamed brown rice.
