8 baby (chat) potatoes 2 (500g) chicken breast fillets, fat trimmed, halved horizontally 1 tbs olive oil 2 tsp finely grated fresh
ginger 1 garlic clove, crushed 1 tbs thinly sliced lemon rind 1 tbs lemon juice 100ml freshly squeezed
orange juice 1 tbs mirin 2 tsp honey 1 tbs chopped fresh chives
1 Preheat oven to 200°C. Line a large baking tray with baking paper. Steam, boil or microwave potatoes for 5 minutes or until just tender. Drain. Place on prepared tray and lightly spray with oil. Bake for 30 minutes or until golden and crisp. 2 Meanwhile, brush chicken with half the oil. Heat a large non-stick frying pan over medium-high heat. Cook chicken for 2-3 minutes each side or until golden and cooked through. Transfer to a plate and cover to keep warm. 3 Heat remaining oil in pan over medium heat. Add ginger, garlic and lemon rind. Cook, stirring, for 1 minute or until fragrant. Add lemon juice, orange juice, mirin and honey and bring to the boil. Cook for 2-3 minutes or until reduced by half. 4 Divide chicken and potatoes among serving plates. Drizzle with glaze, season with salt and sprinkle with chives to serve.
