GRILLED CHICKEN WITH LEMON & GIN­GER GLAZE Smart­points VALUE PER SERVE 7 SERVES 4 | PREP 10 mins COOK­ING TIME 35 mins

8 baby (chat) pota­toes 2 (500g) chicken breast fil­lets, fat trimmed, halved hor­i­zon­tally 1 tbs olive oil 2 tsp finely grated fresh

gin­ger 1 gar­lic clove, crushed 1 tbs thinly sliced lemon rind 1 tbs lemon juice 100ml freshly squeezed

or­ange juice 1 tbs mirin 2 tsp honey 1 tbs chopped fresh chives

1 Pre­heat oven to 200°C. Line a large bak­ing tray with bak­ing pa­per. Steam, boil or mi­crowave pota­toes for 5 min­utes or un­til just ten­der. Drain. Place on pre­pared tray and lightly spray with oil. Bake for 30 min­utes or un­til golden and crisp. 2 Mean­while, brush chicken with half the oil. Heat a large non-stick fry­ing pan over medium-high heat. Cook chicken for 2-3 min­utes each side or un­til golden and cooked through. Trans­fer to a plate and cover to keep warm. 3 Heat re­main­ing oil in pan over medium heat. Add gin­ger, gar­lic and lemon rind. Cook, stir­ring, for 1 minute or un­til fra­grant. Add lemon juice, or­ange juice, mirin and honey and bring to the boil. Cook for 2-3 min­utes or un­til re­duced by half. 4 Di­vide chicken and pota­toes among serv­ing plates.
