1 Combine 2 tsp sambal oelek and 1 tbs lime juice in a medium bowl. Add 600g peeled medium green prawns, tails intact, and toss lightly to combine.
2 Lightly spray a barbecue or chargrill with oil and heat over medium-high heat. Cook prawns, turning often, for 4-5 minutes or until just cooked through.
3 Meanwhile, place 200g pkt beetroot slaw (see Cook’s note), ¾ cup fresh coriander leaves and 100g pkt fried noodles in a medium bowl. Toss well to combine.
4 Whisk 1 tbs lime juice, 2 tsp sesame oil and 2 tsp soy sauce together in a small bowl.
5 Pour dressing over noodle salad and toss to combine. Serve prawns with noodle salad and lime wedges. THIS RECIPE IS Lactose Free.
