AVOCADO FOUR WAYS
Senior Food Editor LUCY KELLY shares her favourite ways to enjoy avos.
1 Mashed on toast for breakfast with a squeeze of fresh lemon juice and sea salt and freshly ground black pepper. Add 5 Smartpoints value for 1 x 35g slice wholegrain bread (toasted) with 2 tbs mashed avocado per serve.
2 In a green side salad with baby cos, witlof and watercress and grated parmesan cheese with an apple cider, grainy mustard and maple syrup dressing. Add 2 Smartpoints value for for 1 tsp grated parmesan, ¼ medium avocado plus ½ tsp maple syrup per serve.
3 In my one-pot black bean, vegie and brown rice bowl with yoghurt, coriander and fresh lime. Add 7 Smartpoints value for ½ cup (85g) cooked brown rice, ¼ medium avocado (diced) and 1 tsp olive oil per serve.
4 In a main course salad of fresh cooked king prawns, corn, mango, fresh chives, basil and coriander with a limey dressing. Add 1 Smartpoints value for 1 tsp olive oil per serve.
