SPICED BRUSSELS SPROUTS WITH YOGHURT DRIZZLE

750g brussels sprouts, halved 2 tbs olive oil 1 tsp sweet paprika 1 tsp ground cumin 1 tsp ground coriander ½ tsp dried chilli flakes ¼ tsp ground turmeric ¾ cup (180g) 99% fat-free plain yoghurt 1 tbs finely grated lemon rind 2 tbs lemon juice ½ cup fresh coriander sprigs
1 Boil, steam or microwave brussels sprouts until tender. Drain. 2 Heat oil in a large frying pan over medium heat. Cook sprouts and combined paprika, cumin, ground coriander, chilli and turmeric, stirring, for 2 minutes or until fragrant. Transfer to a serving dish. 3 Combine yoghurt, rind and juice in a small bowl. 4 Drizzle sprouts with yoghurt mixture and top with fresh coriander. THIS RECIPE IS Vegetarian; Gluten Free.
