1 cup (150g) raw cashews 1 cup (80g) des­ic­cated co­conut 1 tsp maple syrup 2 tsp dried cran­ber­ries, finely chopped 1 tsp pis­ta­chio ker­nels, finely chopped

1 Process cashews, co­conut, maple syrup and 1 ta­ble­spoon wa­ter in a food pro­ces­sor un­til well com­bined and the mix­ture starts to hold to­gether. Trans­fer to a bowl. 2 Stir in cran­ber­ries and pis­ta­chio. Roll into 12 balls. Re­frig­er­ate to chill.
