¾ cup (185ml) fresh

lemon juice ¼ cup (60ml) olive oil 3 gar­lic cloves, coarsely

chopped 3cm piece fresh gin­ger,

peeled, finely grated 1 small fresh red chilli 1 tsp dried oregano 1 tsp sweet pa­prika 1 tsp brown su­gar

1 Use a hand-held mixer or a small food pro­ces­sor to process all in­gre­di­ents un­til well com­bined. Place in a 1 cup (250ml) ster­ilised jar and seal. Store in fridge for up to 1 week.
