PORTUGUESE CHICKEN MARINADE

¾ cup (185ml) fresh
lemon juice ¼ cup (60ml) olive oil 3 garlic cloves, coarsely
chopped 3cm piece fresh ginger,
peeled, finely grated 1 small fresh red chilli 1 tsp dried oregano 1 tsp sweet paprika 1 tsp brown sugar
1 Use a hand-held mixer or a small food processor to process all ingredients until well combined. Place in a 1 cup (250ml) sterilised jar and seal. Store in fridge for up to 1 week.
