MARTIN Swindells is the new head chef at The Peas­ant’s Ta­ble in Mount Hawthorn.

He steps into the role with 20 years in­dus­try ex­pe­ri­ence af­ter work­ing at some of Perth’s most pop­u­lar restau­rants and cafés in­clud­ing Vans Cottes­loe, Su­bi­aco Ho­tel and La Cholita in North­bridge.

Swindells said he planned to make some changes, steer­ing away from the set menu style of en­trée and main and in­tro­duc­ing more share style dishes.

The new menu will fea­ture a dif­fer­ent share dish from Wed­nes­day through to Sun­day night, in­clud­ing a hearty pork hock braise, a warm duck curry, whole baked baby pink snap­per and a crispy roast chicken.

A new dish will be added ev­ery few weeks.
