IT is no easy feat to get a patag­o­nian tooth­fish from sea to plate.

But the species, caught by Leed­erville’s Aus­tral Fish­eries 4000km from Perth off Antarc­tica, is on the menu for the 38th Qan­tas Wine Show of WA An­nual Awards Din­ner on Oc­to­ber 30, which will be hosted by Ver­ity James and Gerry Gan­non.

The Glacier 51 tooth­fish will be among five cour­ses that will be matched with 11 wines at the din­ner held at Hy­att Re­gency Perth.

Aus­tral Fish­eries mar­ket­ing man­ager Dy­lan Skinns said they had four ves­sels spend­ing about three months at a time at sea catch­ing 200 met­ric tonnes per boat.

Mr Skinns said the fish were caught at a depth of 2000m, fol­low­ing a 10-day trip to the Great South­ern Ocean.

He said Aus­tral’s seafood would com­ple­ment the best of the WA wine avail­able at the an­nual show.

“Lots of winer­ies have restau­rants so the show gives us an op­por­tu­nity to net­work with dif­fer­ent peo­ple,” Mr Skinns said.

Hy­att ex­ec­u­tive chef Mark Sains­bury said the menu re­flected West Aus­tralian pro­duce and sus­tain­abil­ity.

Mr Sains­bury said that de­spite not be­ing a drinker, he knew the qual­ity of the wines at the show and how to match them to good food.
