AF­TER two years of star­ing at those south­ern white oak bar­rels lin­ing his East Perth dis­tillery, Jimmy McKe­own can’t wait to crack one open.

“It’s been a while but it’s def­i­nitely worth the wait,” McKe­own said, re­fer­ring to one of the Whip­per Snap­per Dis­tillery-branded, whiskey-filled casks lin­ing the Kens­ing­ton Street venue.

“I’ve had a taste and it’s so uniquely smooth for this style of whiskey,” McKe­own said.

“(Fel­low head dis­tiller) Tim (Hosken) and I are both from the coun­try and we get our grains from our mates’ farms; you just can’t beat these flavours.”

And the flavours he is re­fer­ring to are of Up­shot, the craft dis­tillery’s first Amer­i­can-style whiskey, hand­crafted in the tra­di­tion of bour­bon whiskeys.

Named for its mile­stone in Whip­per Snap­per Dis­tillery’s journey, it of­fers whiffs of but­ter­scotch with del­i­cate hints of cedar and tof­fee, while the palate is creamy with caramel and nut­meg tones, and fin­ishes with clean, well-bal­anced, maple syrup and cit­rus as­pects.

To cel­e­brate its launch, McKe­own will host a pri­vate first-taste ses­sion at an in­vite-only launch event to­mor­row, in­clud­ing a per­son­alised sign­ing ses­sion for the jammy own­ers of the first cask re­lease.

But don’t fret if you haven’t scored an in­vite – the first cask col­lec­tor’s edi­tion whiskey is avail­able ex­clu­sively through the East Perth head­quar­ters for $880 a pop.

Sec­ond-cask re­leases are also avail­able for a more wal­let-friendly $98 from launch day from the dis­tillery doors.

In true Whip­per Snap­per style, the de­sign of the bot­tle is evoca­tive of its ur­ban en­vi­ron­ment and plays on the sur­round­ing cityscape, with fleet­ing im­agery of street art and posters.

“We don’t take our­selves too se­ri­ously here,” McKe­own said.

“We’re in the busi­ness of cre­at­ing the most au­then­tic craft spir­its and that’s what we have achieved with Up­shot. There’s some­thing very uniquely West Aus­tralian about Up­shot and you can taste our State in ev­ery sip.”
