Man­ager takes gam­ble in NSW

ROT­TNEST Is­land Bak­ery man­ager Kim Gam­ble is pulling up stumps on the is­land for a new busi­ness venue in NSW.

The for­mer Cottes­loe restau­ra­teur, who has been manag­ing the is­land eatery for owner Greg Brindle since 2014, has set his sights on a new pro­ject restor­ing the Sir Ge­orge Tav­ern in Ju­giong.

The tav­ern’s web­site says it was es­tab­lished in 1845 and was re­open­ing in spring 2016.

“The Sir Ge­orge will of­fer a unique din­ing and ac­com­mo­da­tion ex­pe­ri­ence,” the web­site said.

“Built in 1852, the his­toric venue is cur­rently be­ing re­stored to cre­ate a warm and re­laxed space where old meets new… with a bou­tique bar, restau­rant and ar­ti­san bak­ery.”
