Gastropub smarts for West
CHRIS and Foni Pollitt have both spent their 20-year successful hospitality careers abroad in London and Montreal, where their bosses have reaped the reward.
Now the West Leederville couple have given themselves a chance to put their money where their mouth is and opened Mayfair Lane at the former The Brown Fox site on Outram Street in West Perth.
Operations manager Foni, born in Melbourne, was an opening manager of 35 gastropubs in England, where she turned old pubs into a pub and dining room.
It was during that time she met her now husband and managing director Chris (originally from South Africa but grew up in Albany and Perth) and a British gastropub conversion is exactly what the pair has done for Mayfair Lane.
“We both thought it was high time to come back home,” Foni said. “Chris had more connections in Perth than I did in Melbourne, so we thought ‘why not’?
“We’re keeping it honest and real with good food, good drink and good conversation; hopefully we can make it into a destination spot between the city and an extension of Subi.”
The pub menu has staples including bangers and mash, burgers and fish and chips, while the dining room is more upmarket with steaks, lamb and twicecooked pork belly.
The venue has undergone a significant décor transformation, becoming lighter and brighter with highlights of timber flooring and wood panelling.
Head chef Shannon Wilson worked in London for eight years and became part of the team for his like-minded vision.
“He understood us and what we wanted,” Foni said. “We want to be like a typical local London pub, which is not about the chef or me, it’s about the customer.
“We just want to make everyone happy; it is that simple.”
Mayfair Lane is at 72 Outram Street, West Perth and open Monday to Saturday, closed Sunday.
It will be officially opened tomorrow night.
