Pineap­ple and straw­berry ice cream

In­gre­di­ents

2 cups pineap­ple chunks, frozen

1 cup straw­ber­ries, frozen ½ cup co­conut milk, plus ex­tra if needed

2 tbs sugar

Method

Place all in­gre­di­ents in a food pro­ces­sor and blend un­til smooth and creamy, adding a lit­tle ex­tra co­conut cream if needed. En­joy in a cup or a cone.

TIP:

You can di­vide any left­over ice cream into an icy pole mould or re­turn into the freezer in ice cube trays – pop the cubes into smooth­ies or re-blend later. — Recipe from Aus­tralian Pineap­ples
