The cui­sine is a blend of Mod­ern French and tra­di­tional dishes by their head chef Lionel Abello. At Fancy Hank’s they serve Amer­i­can-style, slow cooked BBQ, us­ing the finest qual­ity free range meats, cooked us­ing their cus­tom-built, two-tonne smoker. Brisket, ribs and pulled-pork sit along­side the tra­di­tional sides as well as a num­ber of unique dishes. They use tra­di­tional South­ern cook­ing tech­niques and com­bine these with lo­cal pro­duce to put their uniquely Aus­tralian spin on this re­gional Amer­i­can cui­sine.
