Hatanaka Chefs Bring Love of Japan to Saké
Saké Restaurant & Bar has welcomed two new executive chefs at their Melbourne locations and they are brothers! Shimpei Hatanaka is the executive chef at Saké Restaurant & Bar Hamer Hall, while Yosuke Hatanaka is the executive chef at Saké Restaurant & Bar Flinders Lane. Yosuke spent four years at Saké The Rocks, progressing from sushi chef de partie, to senior sous chef. He left in 2016 to return to Japan and immerse himself in the techniques of Japanese cuisine. Shimpei was part of the launch team that opened the inaugural Saké restaurant in 2010, where he worked for six years. He then also returned to Japan and travelled north to Hokkaido and also spent time in Tokyo, Osaka and Kyoto where he spent a year cooking, eating and exploring Japanese saké, whisky and seasonal produce. They’ll both be bringing these enriching experiences to their respective Saké restaurants.
