Hatanaka Chefs Bring Love of Ja­pan to Saké

Saké Restau­rant & Bar has wel­comed two new ex­ec­u­tive chefs at their Mel­bourne lo­ca­tions and they are broth­ers! Shim­pei Hatanaka is the ex­ec­u­tive chef at Saké Restau­rant & Bar Hamer Hall, while Yo­suke Hatanaka is the ex­ec­u­tive chef at Saké Restau­rant & Bar Flin­ders Lane. Yo­suke spent four years at Saké The Rocks, pro­gress­ing from sushi chef de par­tie, to se­nior sous chef. He left in 2016 to re­turn to Ja­pan and im­merse him­self in the tech­niques of Ja­panese cui­sine. Shim­pei was part of the launch team that opened the in­au­gu­ral Saké restau­rant in 2010, where he worked for six years. He then also re­turned to Ja­pan and trav­elled north to Hokkaido and also spent time in Tokyo, Osaka and Ky­oto where he spent a year cook­ing, eat­ing and ex­plor­ing Ja­panese saké, whisky and sea­sonal pro­duce. They’ll both be bring­ing these en­rich­ing ex­pe­ri­ences to their re­spec­tive Saké restau­rants.
