New ad­di­tions to Daydream team

DAYDREAM Is­land Re­sort and Spa has wel­comed two new staff mem­bers to its team with the ap­point­ment of Grace Las­sig as di­rec­tor of sales and Ash­ley Duff as ex­ec­u­tive chef.

Ms Las­sig comes to Daydream Is­land from the Novo­tel Cairns Oa­sis Re­sort, where she was em­ployed in the di­rec­tor of sales and mar­ket­ing role.

She has more than 10 years ex­pe­ri­ence in sales and busi­ness de­vel­op­ment roles within the hos­pi­tal­ity in­dus­try in Aus­tralia and New Zealand.

Daydream Is­land CEO Phil Casey said Ms Las­sig’s ex­ten­sive ex­pe­ri­ence rep­re­sent­ing a range of stun­ning prop­er­ties in Queens­land, was go­ing to be in­valu­able for the growth of the busi­ness.

“She brings a broad range of ex­pe­ri­ence across our key leisure, con­fer­enc­ing and events mar­kets and will com­ple­ment the strong sales and mar­ket­ing team in our Bris­bane of­fice,” he said.

Ms Las­sig re­places Daydream’s pre­vi­ous di­rec­tor of sales Suzy Bohan, who has left the is­land to be with her young fam­ily full time.

Mean­while Ash­ley Duff has al­ready be­gun cook­ing up some changes of his own at the trop­i­cal Whit­sun­day get­away.

Af­ter spend­ing al­most a decade work­ing on cruise ships around the world, Mr Duff brings a wealth of in­ter­na­tional ex­pe­ri­ence to Daydream, where he will be de­liv­er­ing a menu pre­dom­i­nantly seafood­based, com­ple­mented by tapas-style din­ing op­tions.

Mr Duff kicked off his culi­nary ca­reer in Vic­to­ria where he cooked for Mel­bourne’s elite at var­i­ous venues in­clud- ing five star ho­tels and at the exclusive Morn­ing­ton Penin­sula, be­fore mov­ing to Lon­don to de­velop his skills.

For the past seven years he has worked with Royal Caribbean on nu­mer­ous lin­ers where he was re­spon­si­ble for cater­ing for up to 3600 pas­sen­gers, 24 hour a days, seven days a week.

He is in charge of all food pro­duc­tion on Daydream, from Splashes Pool Bar to sig­na­ture restau­rant Mermaid’s, and has al­ready be­gun im­ple­ment­ing some de­li­cious new changes.
