Opening with a bang last Saturday night, tapas and cocktail bar Walter’s Lounge brings a new dynamic to the food and drink culture in Airlie Beach.
Owner Heath Bentley, who previously worked at Qualia Resort and the Hamilton Island Yacht Club, has been tending to bars now for 17 years.
“It’s something every day,” he said.
Originally from Perth, Mr Bentley draws on homely experiences when it comes to creating new cocktails.
His bar will host six regular cocktails and each week create something new to keep things funky and fresh.
Exclusive cocktails include the PBJ which is, as guessed, an old-fashioned infusion of peanut butter and strawberry jam, and the commodore – a pineapple–infused tequila margarita with cardamom and coriander.
Front-of-house staff member Bec Andersen previously spent many years working in a winery in Victoria and has created an extensive wine list for the lounge.
“I want to push boundaries on what people traditionally drink here,” she said.
“It’s all about combining new and old world.”
The wine list is heavily influenced from Italy and France but Ms Andersen expects a Japanese plum saki which “draws on the seventh tastebud” to get tongues wagging.
Head chef Craig Drew said the tapas and desert menu had been specifically picked to complement the beverages and were just that little bit “moreish”.
Designed as shared plates, expect everything from poached chorizo to scallops and pasta puttanesca.
Walter’s Lounge will be open from 11am-late from Thursday to Tuesday.
