He knows how to get the party started with spir­its that get your taste­buds danc­ing and cock­tails that make your heart sing.

His knowl­edge, style and flair bring some­thing new and dec­o­ra­tive to town.

He’s Wal­ter of Wal­ter’s Lounge.

Open­ing with a bang last Satur­day night, ta­pas and cock­tail bar Wal­ter’s Lounge brings a new dy­namic to the food and drink cul­ture in Air­lie Beach.

Owner Heath Bent­ley, who pre­vi­ously worked at Qualia Re­sort and the Hamil­ton Is­land Yacht Club, has been tend­ing to bars now for 17 years.

“It’s some­thing ev­ery day,” he said.

Orig­i­nally from Perth, Mr Bent­ley draws on homely ex­pe­ri­ences when it comes to cre­at­ing new cock­tails.

His bar will host six reg­u­lar cock­tails and each week cre­ate some­thing new to keep things funky and fresh.

Ex­clu­sive cock­tails in­clude the PBJ which is, as guessed, an old-fash­ioned in­fu­sion of peanut but­ter and straw­berry jam, and the com­modore – a pineap­ple–in­fused te­quila mar­garita with car­damom and co­rian­der.

Front-of-house staff mem­ber Bec An­der­sen pre­vi­ously spent many years work­ing in a win­ery in Vic­to­ria and has cre­ated an ex­ten­sive wine list for the lounge.

“I want to push bound­aries on what peo­ple tra­di­tion­ally drink here,” she said.

“It’s all about com­bin­ing new and old world.”


The wine list is heav­ily in­flu­enced from Italy and France but Ms An­der­sen ex­pects a Ja­panese plum saki which “draws on the sev­enth tastebud” to get tongues wag­ging.

Head chef Craig Drew said the ta­pas and desert menu had been specif­i­cally picked to com­ple­ment the bev­er­ages and were just that lit­tle bit “mor­eish”.

De­signed as shared plates, ex­pect ev­ery­thing from poached chorizo to scal­lops and pasta put­tanesca.

Wal­ter’s Lounge will be open from 11am-late from Thurs­day to Tues­day.
